Rewind to mini Nix as a kid and there were very few things mumma Nix could cook (don’t worry I’m not being mean she’s the first to admit it!), however there were a few classics Mum could nail and one of them was bread and butter pudding!
I remember sitting in front of the fire on a cold winters night visiting the fam bam in England scoffing into BB pudding.
Now if you haven’t tried it and you’re think ewwww right now, I employed you to withhold judgement until you’ve tried!
Not only is it a super tasty winter warmer it’s easy AF!
This weekend we attempted cooking BB pudding in the new Weber (no not sponsored) family bbq and it was bloody brill!
Here you go:
1 loaf cafe style raisin toast (this is the cheats way as has all your cinnamon and nutmeg for you)
Butter – use a good one I like lurpack
2cups milk
4 eggs
1tsp vanilla
1/4 cup caster sugar
300ml cream
Demerara sugar for dusting
STEPS:
1. Butter each slice of bread each side and cut diagonally
2. Whisk the milk, sugar, cream, eggs and vanilla until well combined
3. Dip each slice in the custard and lay in tray. Pour remaining liquid over the bread in tray then cover tray with foil
4. Bake at 180 (fan forced) for 30 mins then remove from oven dust with brown sugar and return to oven for a further 10 mins until golden brown
5. Enjoy
